Barbacks are similar to bussers in restaurants. They work behind the scenes to ensure bartenders have everything they need. Examples of a barback’s duties include washing glasses, replacing empty serving bottles, and keeping the service area tidy. This means that mastering the basics of a kitchen operation is the first skill a barback must achieve. They must understand how to prepare garnishes, and recognize the importance of good hygiene in their work.
Second, a barback must recognize that their role is to assist the bartender. Each bartender they work with will have their own likes and dislikes. For example, some may prefer to always have a full stock of ice, whereas others are not so particular. The barback must observe and communicate with each bartender they work with to learn about how they operate and what they need.
Finally, barbacks must have keen observational skills. Bartenders are responsible for ensuring the bar does not overserve customers. However, a busy bar means the bartender has fewer opportunities to observe the clientele for signs of intoxication, aggression, or similar red flags that suggest it is not appropriate to serve the customer more alcohol. If this situation should arise, the barback must support the bartender by pointing out that the customer is not in a proper state to receive service.
